TTC Culinary Program Teaches History of Enslaved African Culinary Arts
NORTH CHARLESTON, SC (FOX 24 NEWS NOW) — There is no question southern cuisine is made a cornucopia of the area’s indigenous crops and animals.
Things like rice, seafood, corn and peanuts were all aplenty and extolled through the virtues of African tradition by the slaves who prepared them.
Kevin Mitchell is a culinary instructor with Trident Technical College’s culinary program and has recently conducted research and developed a thesis on the history of enslaved cooks across the south.
He stopped by FOX 24 News Now to tell us more about his findings and the culinary program.
